Chickpea Salad Recipe
Chickpeas are my favourite snacks. I enjoy them plain—straight out of a can or I have my mother prepare chickpeas curry for me.
The curry is not really a curry since there is no curry powder in the recipe. I will ask my mom for the recipe because it is simple and fast to prepare and contains no oil or any fatty ingredients.
I just love the way my mom makes it (slurp!) and enjoy it every weekend. She makes a big pot for me so I can have it Saturday and Sunday! Any excess (which I rarely have any left over) I can freeze and microwave when I ready to enjoy a wholesome meal.
One of the other ways to enjoy curry of course is by deep frying. But because of caloric content, I prefer the following recipe which is my own and was one day prepared just cause I tossed things together.
But before I share the recipe, you must try it straight out of the can! Just open a can, wash the chickpeas to remove excess salt and munch on them like popcorn. The nutty flavour left in the mouth is so pleasing to me—I absolutely love it and can have half a cup without getting bloated (incidentally—did you know that if you are used to eating a lot of beans and chick peas, you don’t suffer too much from flatulence!) But, there are other ways to enjoy chick peas if you don’t like them straight out of the can.
Ingredients
- 1 can chickpeas (any kind, I prefer Unico)
- 0.25 red onions chopped
- A handful of kalamata black olives
- 0.5 red pepper diced (or chopped)
- a handful of chopped feta cheese
- 1 medium tomato – diced (or chopped)
- Your favourite Kraft Salad dressing (I like Greek because of feta cheese and kalamata olives – you can use Balsamic as well).
Preparation
- Rinse chickpeas to remove excess salt.
- Toss everything together (except for salad dressing)
- Put in the fridge for 30 minutes
When ready to eat, add salad dressing (watch out for the calories!!). Alternatively, just add salt instead of salad dressing to save on calories. It’s healthy – that is all you need to know.
Forget the calories and fat content just enjoy! Eat as is or add it as side salad to a healthy lean protein packed meat like grilled salmon! Yumbo!!!!
